Peanut Oil
DEFINITION
The refined fatty oil obtained from the shelled seeds of Arachis hypogaea L. A suitable antioxidant may be added.
CHARACTERS
Appearance: Clear, yellowish, viscous liquid.
Solubility: Very slightly soluble in ethanol (96 per cent), miscible with light petroleum.
Relative density: About 0.915.
It solidifies at about 2C.
IDENTIFICATION
Identification of fatty oils by thin-layer chromatography.
Acid value: Maximum 0.5, determined on 10.0 g.
Peroxide value: Maximum 5.0.
Unsaponifiable matter: Maximum 1.0 per cent, determined on 5.0 g.
Alkaline impurities: It complies with the test.
Composition of fatty acids:
— saturated fatty acids of chain length less than C16: maximum 0.4 per cent;
— palmitic acid: 5.0 per cent to 14.0 per cent;
— stearic acid: 1.3 per cent to 6.5 per cent;
— oleic acid: 35.0 per cent to 76.0 per cent;
— linoleic acid: 8.0 per cent to 43.0 per cent;
— linolenic acid: maximum 0.6 per cent;
— arachidic acid: 0.5 per cent to 3.0 per cent;

DEFINITION
Peanut Oil is the fully-refined (alkali-refined, bleached, and deodorized at 230C to 260C) oil obtained from the seed kernels of one or more of the cultivated varieties of Arachis hypogaea L. (Fam. Leguminosae). It may contain suitable antioxidants.
IDENTIFICATION
It meets the requirements for Fats and Fixed Oils, Fatty Acid Composition.
IMPURITIES
Alkaline Impurities:
Sample: 10 mL of Peanut Oil.
Analysis: Mix 10 mL of freshly opened acetone and 0.3 mL of water and add 0.05 mL of bromophenol blue. Add the Sample, shake, and allow to stand. Titrate with 0.01 N hydrochloric acid to change the color of the upper layer to yellow.
Acceptance criteria: NMT 0.1 mL of 0.01 N hydrochloric acid is required.

Sample: 1 mL of a solution (1 in 10) of Oil in ether
Analysis: Shake theSamplewith 1 mL of hydrochloric acid and add 1 mL of asolution (1 in 1000) of phloroglucinol in ether.
Acceptance criteria: No red or pink color develops.
