DEFINITION
Monosodium Glutamate contains NLT 99.0% and NMT 100.5% of monosodium glutamate (C5H8NNaO4-H2O).

ASSAY
Acceptance criteria: 99.0% to 100.5%
Chloride and Sulfate: A 280-mg portion shows no more chloride than corresponds to 1.0 mL of 0.020 N ;hydrochloric acid (0.25%).
Lead: NMT 10 µg/g
Clarity and Color of Solution: to pass the test.
Optical Rotation: To pass the test.
pH: 6.7–7.2, in a solution (1 in 20)
Loss on Drying: Dry at 100C for 5 h. NMT 0.5%

DESCRIPTION
Monosodium L-Glutamate occurs as white, free-flowing crystals or crystalline powder. It is freely soluble in water and is sparingly soluble in alcohol. The pH of a 1:20 aqueous solution is between 6.7 and 7.2.
Function: Flavor enhancer.
Identification: The infrared absorption spectrum of the sample exhibits relative maxima at the same wavelengths as those of a typical spectrum as shown in the section on Infrared Spectra, using the same test conditions as specified therein.
Assay: Not less than 98.5% and not more than 101.5% of C5H8NNaO4-H2O, calculated on the dried basis.
Chloride: Not more than 0.2%.
Clarity and Color of Solution: Passes test.
Lead: Not more than 5 mg/kg.
Loss on Drying: Not more than 0.5%.
Optical (Specific) Rotation: [alpha]D20°: Between +24.5° and +25.5°, calculated on the dried basis; or [alpha] 25°546.1 nm: Between +29.4° and +30.4°, calculated on the dried basis.
