Sucrose is a sugar obtained from Saccharum officinarum Linné (Fam. Gramineae), Beta vulgaris Linné (Fam. Chenopodiaceae), and other sources. It contains no added substances.

Specific rotation: not less than +65.9 .
Residue on ignition: not more than 0.05%, a 5-g specimen being used.
Chloride: A 2.0-g portion shows no more chloride than corresponds to 0.10 mL of 0.020 N hydrochloric acid (0.0035%).
Sulfate: A 5.0-g portion shows no more sulfate than corresponds to 0.30 mL of 0.020 N sulfuric acid (0.006%).
Calcium: To 10 mL of a solution (1 in 10) add 1 mL of ammonium oxalate TS: the solution remains clear for at least 1 minute.
Heavy metals: the limit is 5 ppm.
Invert sugar: Dissolve 20 g in water to make 100 mL, and filter if necessary. Place 50 mL of the clear liquid in a 250-mL beaker, add 50 mL of alkaline cupric tartrate, cover the beaker with a watch glass, and heat the mixture at such a rate that it comes to a boil in approximately 4 minutes, and boil for 2 minutes, accurately timed. Add at once 100 mL of cold, recently boiled water, and immediately collect the precipitated cuprous oxide on a tared filtering crucible containing a sintered-glass disk of medium pore size, or suitable equivalent. Thoroughly wash the residue on the filter with hot water, then with 10 mL of alcohol, and finally with 10 mL of ether, and dry at 105C for 1 hour: the weight of the cuprous oxide does not exceed 112 mg.

DEFINITION
β-D-Fructofuranosyl α-D-glucopyranoside.
It contains no additives.

CHARACTERS
Appearance: White or almost white, crystalline powder, or lustrous, colourless or white or almost white crystals.
Solubility: Very soluble in water, slightly soluble in ethanol (96 per cent), practically insoluble in anhydrous ethanol.

C. Dilute 1 mL of solution S (see Tests) to 100 mL with water. To 5 mL of the solution add 0.15 mL of freshly prepared copper sulfate solution and 2 mL of freshly prepared dilute sodium hydroxide solution. The solution is blue and clear and remains so after boiling. To the hot solution add 4 mL of dilute hydrochloric acid and boil for 1 min. Add 4 mL of dilute sodium hydroxide solution. An orange precipitate is formed immediately.

TESTS
Solution S: Dissolve 50.0 g in water and dilute to 100 mL with the same solvent.
Appearance of solution: Solution S is clear.
Conductivity: Maximum 35 microS/cm at 20C.
Specific optical rotation: + 66.3 to + 67.0.
Colour value: Maximum 45.
Dextrins: If intended for use in the manufacture of large-volume parenteral preparations, it complies with the test for dextrins. To 2 mL of solution S add 8 mL of water, 0.05 mL of dilute hydrochloric acid and 0.05 mL of 0.05 M iodine. The solution remains yellow.
Reducing sugars: To 5 mL of solution S in a test-tube about 150 mm long and 16 mm in diameter add 5 mL of water, 1.0 mL of 1 M sodium hydroxide and 1.0 mL of a 1 ;g/L solution of methylene blue. Mix and place in a water-bath. After exactly 2 min, take the tube out of the bath and examine the solution immediately. The blue colour does not disappear completely. Ignore any blue colour at the air/solution interface.
Sulfites: Maximum 10 ppm, calculated as SO2.
Loss on drying: Maximum 0.1 per cent, determined on 2.000 g by drying in an oven at 105C for 3 h.
Bacterial endotoxins: Less than 0.25 IU/mg, if intended for use in the manufacture of large-volume parenteral preparations.

DESCRIPTION
Sucrose, in its processed form, occurs as a white, crystalline solid. It is obtained for commercial use from sugar cane and sugar beets. It is very soluble in water, in formamide, and in dimethyl sulfoxide and is slightly soluble in ethanol.
Function: Nutritive sweetener; formulation and texturizing aid.

Identification: A sample meets the requirements under Optical (Specific) Rotation.
Assay: Not less than 99.8 and not more than 100.2 International Sugar Degrees.
Arsenic: Not more than 1 mg/kg.
Color: Not more than 75 IU.
Invert Sugar: Not more than 0.1%.
Lead: Not more than 0.1 mg/kg.
Loss on Drying: Not more than 0.1%.
