DEFINITION
Calcium Propionate contains NLT 98.0% and NMT 100.5% of calcium propionate (C6H10CaO4 ), calculated on the anhydrous basis.
IDENTIFICATION
A. A solution of Calcium Propionate (1 in 20) imparts a transient yellowish red color to a nonluminous flame.
Limit of Fluoride: To pass the test. NMT 30 µg/g
Limit of Lead: To pass the test. NMT 2 µg/g.
Magnesium (as MgO): To pass the test. (about 0.4%).
Water-Insoluble Substances: To pass the test. NMT 0.2%
pH: 7.5–10.5, in a solution (1 in 10).
Water Determination: NMT 5.0%
Loss on Drying: Dry at 105C for 2 hr. Acceptance criteria: NMT 4%

DESCRIPTION
Calcium Propionate occurs as white crystals or as a crystalline solid. The pH of a 1:10 aqueous solution is between 7.5 and 10.5. One-gram dissolves in about 3 mL of water.
Function: Preservative; mould inhibitor.
REQUIREMENTS
Identification:
A. A 1:20 aqueous solution gives positive tests for Calcium.
B. Upon ignition at a relatively low temperature, a sample yields an alkaline residue that effervesces with acids.
Assay: Not less than 98.0% and not more than 100.5% of C6H10CaO4, calculated on the anhydrous basis.
Fluoride: Not more than 0.003%.
Insoluble Substances: Not more than 0.2%.
Lead: Not more than 2 mg/kg.
Magnesium (as MgO): Passes test (about 0.4%).
Water: Not more than 5.0%.
