Calcium Ascorbate
Calcium ascorbate or Ascorbic acid calcium salt or Calcium diascorbate is approximately 10% calcium by mass. As a food additive, it has the E number E 302. It is approved for use as a food in several countries. It is used as an antioxidant. Calcium ascorbate can extend the shelf life of food and beverage products and protect against deterioration of color, flavor, and overall quality. It is generally used as calcium ascorbate dihydrate.

IDENTIFICATION
A. Identification Tests General, Calcium: A 100 mg/mL solution meets the requirements.
B. A 100 mg/mL solution decolorizes a 100 mg/mL solution of dichlorophenol–indophenol.
C. Infrared Absorption.
ASSAY
Acceptance criteria: 98.0%–101.0% on the as-is basis
Arsenic: NMT 3 µg/g
Limit of Fluoride: NMT 10 ppm
Optical Rotation: +95° to +97°
pH: 6.8–7.4
Loss on Drying: Dry 3 g at 105C for 2 h: it loses NMT 0.1% of its weight.

DESCRIPTION
Calcium Ascorbate occurs as a white to slightly yellow, crystalline powder. It is soluble in water, slightly soluble in alcohol, and insoluble in ether. The pH of a 1:10 aqueous solution is between 6.8 and 7.4.
Function: Antioxidant.
REQUIREMENTS
Identification: A 1:10 aqueous solution gives positive tests for Calcium, Appendix IIIA, and it decolorizes dichlorophenol–indophenol.
Assay: Not less than 98.0% and not more than 100.5% of C12H14CaO12·2H2O.
Lead: Not more than 2 mg/kg.
Optical (Specific) Rotation: Between +95° and +97°.
Oxalate: Passes test.
